Creamy (Dairy-Free) Shiitake Mushroom Soup

Chilly nights need this Creamy (Dairy-Free) Shiitake Mushroom Soup. Trust us. We’ve tried it; we know. And even better, it’s rather easy to make, especially once you’ve gathered and chopped all your simple ingredients. Of course, you can make it without the Shiitake Mushroom Powder, but we can give you two good reasons to choose to get some…

Creamy (Dairy-Free) Shiitake Mushroom Soup

Serves: 2 main or 4 starter portions


  • 2 Tbsp olive oil
  • 2 cups brown mushrooms, roughly chopped
  • 2 cups mixed wild mushrooms, roughly chopped
  • 1 Tbsp fresh garlic, chopped
  • 1 Tbsp thyme, chopped
  • 1 tsp salt
  • 1⁄3 cup Drasanvi Shiitake Powder
  • 2½ cups vegetable stock or bone broth
  • 1 cup coconut milk

Garnish Suggestions

Fresh wild mushrooms, thyme, and Drasanvi Hemp Hearts


  1. In a large pan, sizzle onions in olive oil on high until they start turning glassy.
  2. Add the chopped mushrooms and sautée until they’re sweating nicely.
  3. Turn heat down to medium-high and stir in the garlic and thyme, just long enough to release that magic garlic aroma.
  4. Stir in the salt, shiitake powder, stock and coconut milk, and simmer gently for 10 minutes.
  5. This step depends on your texture preference… choose one of these:
    • Totally chunky: serve as is
    • Partly chunky: remove half the soup and blend until smooth, adding it back to the pan and gently reheating before serving
    • Totally smooth: blend all the soup, and gently reheat
  6. Pour into bowls, garnish and serve.
