FOR THE EGGS…
In a bowl suspended over hot (not boiling) water, gently melt and stir together all ingredients except the dates.
Blend mixture with dates + ¼ cup of the soak water until smooth.
Refrigerate/ freeze until firm. ± 30 min.
Scoop and shape into eggs.
Return to fridge and make the coating…
FOR THE CHOCOLATE COATING (optional)
In a bowl suspended over hot (not boiling) water, gently melt together all ingredients.
Drizzle over eggs, or dunk to totally coat.
Refrigerate or freeze until eating.
